Tsolikouri is a front-runner of Western-Georgian white wines, the third most widespread throughout the country. Five regions of Georgia: Imereti, Guria, Samegrelo, Adjara, Abkhazia take pride in producing some of the best wines from this variety. The Tsolikouri of the Wine Thieves company comes from Obcha village, Baghdati, Imereti region, the best terroir for this variety. The wine is made in a classic manner, is golden/straw in color and has distinct sweet top aromas, with the notes of ripe pear, ripe yellow tkemali (wild plum) and dried tangerine. It is a powerful, full-bodied, vigorous wine, with high acidity and a long finish.
Food pairing: Tsolikouri is best paired with Western Georgian cuisine, Imeretian first of all, involving a lot of spices/dressing. This wine also goes well with dishes seasoned with vinegar. It is best with fish, khachapuri, boiled hen, edible greens.
